Banana Cream Pie


1 9-inch pie shell, baked (recipe here)
3 bananas
1 C sugar
1/3 C flour
1/4 tsp. salt
3 C whole milk
4 egg yolks
3 T butter
2 tsp vanilla

Slice 3 bananas into your baked and cooled pie shell, set aside. Combine sugar, flour, and salt in a saucepan. Gradually stir in milk. Cook and stir over medium beat until thickened and bubbly. Remove from heat. Beat egg yolks slightly and mix with 1 C cooked mixture. Pour back into pan and bring to a slow boil. Cook and stir 2 min more. Remove from heat. Stir in vanilla and butter, pour over bananas into baked pie shell. Place plastic wrap over pudding to prevent skin from forming. Cool completely. Refrigerate until ready to serve. Top with whipped cream.

I love banana cream pie, and this is my favorite recipe for it. It is from the Family Dinner Cookbook, and always hits the spot!
