- 1 1/2 C. all-purpose flour
- 2/3 C. granulated sugar
- 1/2 C. yellow corn meal (I love Bob’s Red Mill)
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1 1/4 c. milk
- 2 large eggs, lightly beaten
- 1/3 C. vegetable oil
- 3 Tbsp. butter or margarine, melted
Instructions:
- Preheat oven to 350 degrees F.
- Grease muffin cups-Makes about 18 muffins.
- Combine dry ingredients in a medium mixing bowl.
- Combine wet ingredients in a smaller bowl. Mix well.
- Pour wet mixture into dry mixture and stir just until dry ingredients are moistened.
- Spoon mixture into muffin cups about 2/3 full.
- Bake 18-20 minutes or until toothpick comes out clean.
We love these corn muffins! They are great with chili.
