Banana Oat Muffins



2 1/4 cups oat bran ( Bob's Red Mill brand)
1 tablespoon baking powder
1/4 cup brown sugar -- packed
1/4 cup chopped walnuts
1 1/4 cups skim milk
2 bananas -- very ripe
2 egg whites
2 tablespoons canola oil
1 teaspoon vanilla extract

Preheat oven to 425ยบ F. Mix the dry ingredients in a large bowl. Mix the milk, bananas, egg whites, and oil in a bowl or blender. Add to the dry ingredients and mix. It will be thin like cake batter. Line the muffin pan with paper baking cups or spray the muffin pan with Pam, and fill them with batter. Bake for 15 minutes. Watch closely that these do not overcook.
This recipe makes 12 muffins

This is a healthy recipe my Mom makes that I have always enjoyed.
