Aloha Mango Rice Bowls

Aloha Mango Rice Bowl
1 cup diced chicken breast
1 teaspoon coconut oil (or other cooking oil)
few drops coconut extract
Grill Mates BBQ Seasoning by McCormick
2 cups brown rice cooked
1 cup kidney beans drained

Mango
 Avocado
salsa ( I love the mango or pineapple salsa with this)
plain Greek yogurt (or sour cream)
 coconut
sliced lime
Crispy tortilla strips

Melt coconut oil in non-stick skillet.  Add chicken and cook till browned and not pink inside.
Sprinkle a few drops of Coconut Extract on the chicken and toss.  Sprinkle with the BBQ seasoning.
Toss the rice and beans together, place in a bowl and add the chicken.
Top with mango, avocado, salsa, yogurt and coconut.  Serve with lime slice.
Serves 2

Another Mom original recipe! I love this one and always make enough for leftovers.
