1 3/4 C flour
1/2 C sugar
2 1/2 tsp baking powder
3/4 tsp salt
1 egg
1/3 C oil
3/4 C milk
1 C blueberries (fresh is best, but frozen work well too, just rinse before using)
Mix dry ingredients together. Combine wet ingredients in separate bowl and mix well. Make a well in the center of dry ingredients and pour the wet ingredients in. Stir gently just until combined, do not over mix. Add the blueberries and gently fold id. Fill greased muffin tins 2/3 full.
Streusel Topping:
1 T melted butter
2 T flour
1/4 C sugar
1/2 tsp cinnamon.
Mix with a fork to make crumbs. Add more butter if needed. Sprinkle on muffins, then bake 400 degrees F. for 15-20 min. They will be lightly brown and a tooth pick inserted in the middle will come out dry.
I make these all the time for all different occasions. They remind me of my Mom, and since they are my Mom's recipe, they are the best.
