4 Large Potatoes peeled
1 teaspoon fresh or dried onion grated
1 egg beaten
1 teaspoon salt
2 -4 T. flour
pepper to taste
canola oil for frying
Directions
1. Finely grate potatoes, rinse and drain well and put in a large bowl with onion. Drain off any excess liquid.
2. Mix in egg, salt and pepper. Add enough flour to make mixture thick.
3. Turn oven to low, about 200 degrees.
4. Heat 1/4 inch oil in the bottom of a heavy skillet over medium high heat. Drop 1/4 cup of batter in 2 or three mounds into the hot oil, and flatten to make 1/2 inch thick pancakes. Fry, turning once, until golden brown. Transfer to paper towel lined plates to drain, keep warm in oven until serving time. Repeat until all potato mixture is used.
My Mom used to make these on St. Nicholas Day for dinner! We would eat them with ketchup and applesauce.
