1 C light coconut milk
1 C water
1/2 tsp salt
2 tsp. grated fresh ginger
1 C uncooked jasmine rice
1 C fresh diced pineapple
1/4 C green onion
2 T chopped toasted almonds
1/2 lime cut in wedges
In a saucepan, combine coconut milk, water, ginger, salt. Bring to a boil. Stir in rice. Reduce heat, cover, simmer until rice is tender and liquids absorbed. About 20 min. Remove from heat, add pineapple and green onions. Cover and let sit 5 min. Fluff with fork and sprinkle with nuts. Serve with lime slices.
