Fruit Pizza





















Sugar Cookie Crust
1/2 Cup Butter
1/4 Cup Shortening
1 Cup Sugar
2 Eggs
1 Tsp. Vanilla
1 Tsp. Baking Powder
1 Tsp. Salt
2 1/2 Cups Flour
Roll out the dough so it is round and about 1/4" thick. I have found it is easiest to shape the dough into one big ball and squish it down right onto the cookie sheet. Then I roll it out right on the sheet.  Bake at 400 degrees F. for about 10 minutes. You want it to be slightly brown. Let it cool before you put the toppings on.

Topping:
8 oz. Package of cream cheese
1 Cup powder sugar
1 T. Lemon juice

Mix with beaters until smooth. Add to the pizza crust after it has cooled then arrange desired fruit on top. Chill before eating. Some of my favorite fruits to do are strawberries, blue berries, raspberries, kiwi, mandarin oranges, etc.

This is such a fun dessert to make. It looks great, and is not a heavy feeling dessert. I love to make this in the middle of Winter when I'm really hungry for fresh fruit.
