2 Cups flour
2 Tablespoons sugar
3 tsp. baking powder
1/2 tsp. salt
Cut in 1/2 Cup of butter till mixture resembles coarse crumbs. Mix 1 beaten egg and 2/3 Cup light cream; add all at once to dry mixture; stir just enough to moisten. Roll out dough 1/2 inch thick and cut with biscuit cutter. Place circles on cookie sheet. Bake at 450 degrees for 8-10 min or until golden brown on top. Remove from baking sheet split in 2 layers, butter bottom layer. Spoon in sliced, sugared strawberries, and whipped cream. Serve warm or cooled.
I love to make these for Easter or Mother's day. The recipe comes from the old version of the Better Homes and Garden Cookbook, or as everyone calls it, the red and white checkered cook book. I love to enjoy these warm, and you can actually chill the dough circles until you are ready to bake them to make prepping a little easier.
