Minestrone Soup



1 package stew meat cut into small pieces, fat removed
2 T Better than bullion beef flavor
1 onion
1 C celery
4 garlic cloves
salt and pepper
Put the above ingredients into a large pot, add 8 C water, salt and pepper to taste. Boil 2-3 hours covered, until tender.

Add:
2 large cans diced tomatoes
1 tsp oregano,
1 tsp basil
1/4 C red wine vinegar
Cook one more hour.

 Add:
1 C diced/peeled carrots
1 Zucchini diced
1 Yellow Squash diced
1 can kidney beans(rinsed)
1 can white beans (rinsed)
4 C shredded cabbage
1 C fresh spinach
I will usually add 2-4 cups of extra hot water with beef bullion  at this point because the liquid level really goes down.

Simmer 30 min or until veggies are tender. Add 3 Cups cooked pasta. Salt and pepper to taste. Serve with fresh grated parmesan cheese.

This is my Mom's recipe, and like a lot of her recipes, it makes a ton! I love making this soup and sharing it. I once brought it to a sick neighbor who swore it was magic:)
