Pasta Pomodoro

Pasta Pomodoro
2 teaspoons olive oil
 4 garlic cloves crushed, or 1 teaspoon garlic powder
1 teaspoon dried onion

Sauté garlic and onion in the olive oil.
Add 4 cups diced fresh tomatoes.
Stir and add 3 tablespoons diced fresh Basil, and 1 tablespoon balsamic vinegar.

Cover and simmer 10 minutes. ( Add salt and pepper to taste.)
Serve on pasta with slices of fresh mozzarella and fresh grated parmesan cheese.

I have loved pomodoro ever since I tried it for the first time at one of my favorite restaurants, Trios. My Mom made her own version of this and it is even better than the restaurants! I prefer to serve it over angel hair pasta. I feel that it is crucial to only make this recipe with garden tomatoes. I have never tried store bought or canned for this, but I just don't think it would quite work. We eat this so much during the Summer, as soon as everyone's gardens are full of fresh tomatoes.
