2-8 oz. packages cream cheese
3/4 C sugar
2 eggs
1 T lemon juice
1 tsp. vanilla
24 Nilla Waffers
Beat cream cheese and sugar well. Add eggs, lemon juice, and vanilla. Beat well until fluffy. Line cupcake pans with papers. Put 1 wafer in each. Fill 2/3 full with batter, over the cookie. Bake 375 degrees F. for 15-20 min. Cool. Chill. Top with cherry pie filling(about 3 cherries per cake). Makes about 24. I know these are called tiny cherry cheese cakes, but I also like to put sugared, sliced strawberries on top instead of cherries sometimes.
I love making these for parties! They are so cute and so tasty.
