Mini Chocolate Chip Cheese Cakes



For the crust:
About 15 oreos
3 T sugar
3 T butter melted

Crush the oreos in a ziplock until they are very fine crumbs, it works best to use a rolling pin. Add the crumbs to a small bowl and stir in the sugar. Once combined, drizzle the butter in the mixture, and stir until well incorporated. Press a heaping tablespoon on the bottom of cupcake papers(I like to use the foil ones to hold the shape).

For the cheese cake:
2-8 oz. packages cream cheese
3/4 C sugar
2 eggs
1 T lemon juice
1 tsp. vanilla
1/2 C mini chocolate chips 

Beat cream cheese and sugar well. Add eggs, lemon juice, and vanilla. Beat well until fluffy.  Fill cupcake papers 2/3 full with batter, over the cookie crust, sprinkle about 1 tsp. of chocolate chips on the top. Bake 375 degrees F. for 15-20 min. Cool. Chill. Makes about 24.

This is my very own recipe I made up! I love my large chocolate chip cheese cake, so I thought it would be fun to make a smaller version. These are always a big hit!
