1 cup vegetable oil
2 cups sugar
4 eggs
15 oz. canned pumpkin
2 cups flour
2 teaspoons cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
Mix all the ingredients in one bowl. Spread on a 16x12 cookie sheet, sprayed with pam. Bake at 350 degrees for 20 minutes. Allow to cool. Frost with cream cheese icing.
Icing:
3 oz. cream cheese
1/2 cup butter, softened
1 teaspoon vanilla
2 cups sifted powdered sugar
Beat the cream cheese, butter, and vanilla together. Add the powdered sugar and blend until smooth.
These are super easy to whip up, and are just amazing. This is my sister-in-law Laura's recipe, and are always a crowd pleaser.
