Lemon Bars
For the crust:
1/2 C. soft butter
1/4 C. powder sugar
1 C. flour
Cream butter and powder sugar; add flour. Spread in an 8x8 glass dish and press it down so it is even. Bake at 325 degrees F. for 15 to 20 minutes, until it does not look raw anymore. While the crust is baking, prepare the next layer:
2 eggs
1 C. sugar
2 T. flour
2 T. fresh squeezed lemon juice
Grated rind of 1/2 lemon
Beat eggs slightly, and add the sugar, flour, lemon juice, and rind. Mix well and pour over hot crust after it comes out of the oven. Now bake for 15-20 minutes at 325 degrees F. It is done when it no longer jiggles. Remove from the oven and sprinkle with powdered sugar.
This recipe is from the Lion House Recipes cook book. These lemon bars are to die for! They always disappear so fast, it's amazing we were able to grab a picture of them. They are the perfect dessert after a heavy meal, because they are nice and light. I always get hungry for these when the weather starts getting warmer.
