Red Pepper Pasta


















1 box whole wheat spiral pasta (boil according to box directions). I use the 13.25 oz package.
1 12 oz jar of sweet red roasted peppers
4 cups fresh spinach
1 cup cooked chicken in cubes
Shredded Parmesan cheese
1 cup creamy Ceasar dressing
salt/pepper to taste.
2 teaspoons olive oil
3-4 cloves garlic (or garlic salt if you are in a hurry)
After cooking the pasta, drain and set aside. Put olive oil in fry pan, add chicken and garlic, or garlic salt, and brown, add spinach and saute, add peppers and warm all up. Add to the pasta and add dressing and cheese, then salt and pepper to taste.
Another one of Andy's favorites! I am kinda of weird about lemon, and love to put lots of lemon juice on my own portion. Don't knock it until you try it;)
