Baked Tortellini Casserole


2 Tablespoons of Olive Oil
1 Pound lean ground beef
Small yellow onion diced
2 minced garlic cloves
28oz can of crushed tomatoes
8 oz can of tomato sauce
1 teaspoon kosher salt
black pepper to taste
24 oz package of fresh cheese tortellini
3 cups freshly grated mozzarella cheese
 
Saute onions and garlic in olive oil until soft. Add ground beef and season with salt and pepper. Once beef is cooked, stir in tomatoes and tomato sauce. Stir in uncooked tortellini and half of the cheese. Transfer to casserole dish and sprinkle with remaining cheese. Cover tightly with foil and bake at 350 degrees for about 30 minutes.
 

This is another Pinterest recipe. I love how quick and easy it is. If you want to freeze this one, do everything except baking it. Instead, let it cool, cover with plastic wrap, then wrap in foil. Take it out of the freezer 2 days before you want to bake it.
