French Country Beef Stew


6 slices bacon
1 lb beef stew meat
1/2 cup flour
1/2 cup celery
1 large onion
3 large carrots
6-7 medium red potatoes diced
3 garlic cloves
1/2 cup red wine vinegar
2 T. parsley
1 1/2 C. beef broth (Use hot water and better than bouillon beef flavor)
salt and pepper

Heat oven to 350 degrees. Cook bacon until crisp and then crumble. Save to put on stew. Mix flour, salt, and pepper, coat beef cubes in flour mixture. Brown in bacon drippings. Put in 3 qt. casserole dish. Mix remaining ingredients, except potatoes and carrots. Cover and bake 1-2 hours until tender. Add carrots and potatoes put back in oven at 450 for one more hour, or until vegetables have softened. Serve topped with bacon.


This is one of my favorite recipes from my Mom. It has so much flavor and just tastes so good on a cold day.
