Make basic roll dough:
3 1/2 C flour
2 tsp. yeast
1 1/4 C milk
1/4 C sugar
1/4 C butter
1 tsp. salt
1 egg
Combine & mix 1 1/2 C flour & the yeast. In a glass bowl, heat: milk, sugar, salt, butter, in the microwave until butter melts. Add the wet ingredients to the dry mixture. Beat 1/2 min. Add egg. Beat 3 more min. Add enough of remaining flour to make soft dough. You want it to still be a little sticky, not too dry! Mix 1-2 min. Place dough in greased bowl. Cover, and let rise 1 1/2 to 2 hours. Punch down. Let rest 10 min covered.
On floured surface, roll out dough into long rectangle about 20"x10". Spread a generous amount of butter all over dough, sprinkle with cinnamon, and brown sugar(don't skimp!), then more cinnamon. Roll up the dough, then cut 8 slices with a sharp knife or a string. Place on greased cookie sheet or casserole dish, let raise 30-45 min.
Bake 375 degrees F. for 20 min. When you take them out of the oven, brush butter on top. You can do icing or cream cheese frosting on the top. For the icing:
Icing:
1 T butter melted, 1 cup powder sugar, 1 tsp. vanilla. Add enough milk to thin out. Drizzle over cinnamon rolls.
My Mom's cinnamon rolls are my favorite! She would always make them for us to have for breakfast on Thanksgiving morning.
