3 1/2 C flour
2 tsp. yeast
1 1/4 C whole milk
1/4 C sugar
1/4 C butter
1 tsp. salt
1 egg
Combine & mix 1 1/2 C flour & the yeast in kitchen aid mixer. Heat in microwave in a glass bowl: milk, sugar, salt, butter, let sit until butter melts. Add to dry mixture. Beat 1/2 min. Add egg. Beat 3 more min. Add enough of remaining flour to make soft dough, but still a little sticky. Mix 1-2 min. Place dough in greased bowl. Cover, and let rise 1 1/2 to 2 hours. Punch down. Let rest 10 min covered. Shape rolls as desired.
My Mom will grease cupcake tins and put 2 little dough balls in each tin. Let raise 30-45 min. Bake in oven 400 degrees for 10-12 min. until golden brown. Once out of the oven, rub butter on the tops. Makes about 1 1/2 dozen rolls.
No rolls can compare to my Mom's homemade rolls! Best served with homemade jam.
