Potato Soup


12 C. peeled, cubed russet potatoes
4 cups chopped onion (about 2 onions)
Cook in boiling water until tender(just use enough water to cover the potatoes). Do not drain water. Fry 1 LB bacon cut into small pieces. Add to potatoes after you beat potatoes smooth. Add 16 oz sour cream, 2 T parsley, salt and pepper to taste.

My Mom would always make homemade bread to eat with this soup. It's so delicious to dip bread into!
