Mom's Chili



1 large package of stew meat cut into small pieces(remove any fat)
1 Large diced onion
6 cans pinto beans(drained and rinsed)
6 cans kidney beans(drained and rinsed)
2 large cans crushed tomato
6 oz tomato paste
4 crushed garlic cloves
4 tsp. cumin
1 T. chile powder
2 tsp. salt
1/4 tsp. pepper
2 tsp. pinto bean seasoning

Place stew meat in large pot with the onion and cover with water. Bring to a boil on medium-high heat. Simmer 2-3 hours until meat is tender. Add more water if water level gets too low. After meat is cooked, add the beans, crushed tomato, tomato paste, garlic, and spices. Add 4 cups of water and continue to cook on medium heat until it starts to boil. Cover w/lid and cook 2 hours stirring occasionally. After an hour, taste and add more spices if needed, or more water if it starts to look too thick.

My Mom's chili is my favorite! You have to eat it with cheese, sour cream, and Fritos on top. She does not have a written down recipe for this so one day I just watched her make it and tried to write down the steps, so you really just have to add spices and water as needed. It's delicious though and also freezes great!
