- I cut my squash in half, scooped out the seeds and slimy stuff and placed it shell side up on a plate with about 1tsp. of water. Then I microwaved it for 10 minutes until it was nice and tender and scraped out the insides with a fork making "spaghetti."
- Next, I added 1 wedge of light (or regular) Laughing Cow cheese, 1tsp light sour cream and about 3tsp. of Kraft parmesan cheese. (You can be very generous and add lots of cheese because it's such a healthy dish, so go wild if you want)
- Finally, I stirred all of the ingredients until smooth and melted then added a touch of salt and fresh pepper.
My sister gave me this recipe and it has become one of my favorites to make for lunch!
