2 1/4 C flour
4 tsp baking powder
3/4 tsp salt
1 1/2 T sugar
2 eggs
2 1/4 C milk
1/2 C oil
Whisk together dry ingredients. Mix wet ingredients in a separate bowl, then add to dry ingredients. Stir just until combined, do not over mix! Bake in waffle iron. Serve with syrup and butter, or fruit and whipped cream!
Waffles with strawberries and whipped cream, scrambled eggs with bacon in them, and sausages. That, is my all time favorite breakfast! Andy learned how to make these pretty quick after we got married, since they are my favorite! We always double the recipe so we can freeze some for later. This is also our Christmas morning traditional breakfast.
I have to say, I also love my waffle iron! It's the Presto FlipSide Belgian Waffle maker, and I think it makes the perfect waffles.
