Mountain Man Breakfast

 

  • 2 LBS. breakfast sausage
  • 2 LBS. Frozen hashbrowns (we like them diced)
  • 9 Eggs, beat with 1/4 C. of water
  • 2 C. Cheese
Fry and crumble the sausage in a 12" dutch oven over a full bed of coals. Remove cooked sausage to a plate with a paper towel, and brown the potatoes in the remaining sausage drippings. Spread the potatoes evenly on the bottom once cooked, and put the sausage on top of the potatoes. Pour the egg/water mixture over the sausage, and cover with lid. Cook for about 15-20 minutes with 8 coals underneath and 16 on the lid, until the eggs are cooked through. Sprinkle the cheese on, and put the lid back on until cheese is melted(this is usually only a couple minutes).

Serve with ketchup!

This recipe is so simple, but seriously tasty! We love making this when we go camping, or even in our backyard for a tasty breakfast.
