1 red onion, thinly sliced
1/2 cup apple cider vinegar
1 T. sugar or honey
1 1/2 tsp. kosher salt
1 C. boiled water
Place the onions into a large mason jar. Add the vinegar, honey or sugar, and salt. Pour the boiling water on top and place the lid onto the mason jar. Once it has cooled down and is not too hot to touch, give the jar a shake. Let it sit at room temperature for about an hour, and then keep it in the fridge. You can keep them for up to 2 weeks in the fridge.
I am not a huge fan of onions, but I LOVE these pickled ones! They are so good on salads, hamburgers, and so many things!
