Baked Carmel Corn

1 C butter
2 C brown sugar
1/2 C corn syrup
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp vanilla
6 qtss popped popcorn

Melt butter, sugar, syrup, and salt. Bring to a boil, stirring constantly. Boil 5 more minutes without stirring. Remove from heat, add soda and vanilla. Pour over popcorn. Turn in large roaster pan and bake 250 degrees. Stir 15 min intervals for 1/2 hour, then turn the heat to 225 for another half hour, continuing to stir in 15 min intervals.

One of my favorite Christmas traditions is baking with my mother-in-law! She taught me how to make so many yummy candies and goodies!
