Spinach Mushroom Salad


Salad:
1 bag spinach
1 head romaine lettuce
Sliced white button mushrooms
1/2 bottle hormel real bacon bits (black labeled bottle)
1 C. grated swiss cheese
1 pt. cottage cheese
1 thinly sliced red onion (optional)

Dressing:
2/3 C. white vinegar
2/3 C. sugar
3/4 C. oil
1/2 tsp. salt
1/2 tsp dry mustard
3/4 T poppy seeds

Wash spinach, lettuce, and mushrooms. Chop lettuce. Assemble all ingredients for salad and toss.

Combine all ingredients for dressing except the poppy seeds, in a blender and mix on high for 3 minutes. Add poppy seeds and pulse blender once. Add dressing to salad and mix well. Dressing will cause salad to get soggy quickly so don't add the dressing to the salad until you are ready to serve.

Another one of my favorite recipes from my sister-in-law Laura! I think it's really unique with the cottage cheese. Really amazing flavors.
