Strawberry Salad

2 bags of Salad Mix. (I use the one with butter lettuce and red lettuce.)
2 cups fresh strawberries, sliced.
2 cups Monterey Jack cheese, grated.
Candied nuts
Dressing (Recipe below)
To make candied nuts: Melt 1 cup powdered sugar in non-stick fry pan, add 2 cups nuts (I use pecans, but almonds or walnuts are good too) and stir well. Pour out onto buttered plate and cool. When cool, chop up in little pieces.

Toss salad mix, cheese, strawberries and nuts together (saving 1/2 cup nuts, cheese and strawberries for the top). Then toss the dressing with the salad and add the remaining nuts, cheese and strawberries.

Poppy Seed Dressing:
3/4 cup sugar
1 Tablespoon dry mustard
1/2 Teaspoon salt
1/3 cup apple cider vinegar 
3 Tablespoons orange juice
1 cup canola oil
Mix well in blender, or with Burr Stick 
After mixing, add 1 1/2 Tablespoons Poppy Seeds.


This salad is always delicious and a great one to bring to events. The dressing cracks me up because the original recipe called for 3 T. onion juice, but my Mom didn't have her glasses on and thought it said orange juice, and this recipe was born.
