12-15 cups Whole Wheat Flour (Start with 8 Cups, and be sure it's 14 percent protein)
2 and 1/2 Tablespoons SAF Instant Yeast
2 Tablespoons Vital Wheat Gluten
2 Tablespoons salt
1/2 cup oil (you can use 1/4 cup liquid lecithin, or 1/4 cup applesauce, to total 1/2 cup)
2/3 cup honey
2 and 1/2 Tablespoons Dough Enhancer
Combine 8 cups fresh wheat flour and 6 cups warm water. Using dough hook mix to paste consistency. Mix in yeast, then add salt, honey, oil, and gluten. Add enough more flour until dough pulls away from sides of bowl, be careful not to add too much flour, I usually add about 3-4 more cups at this point. Mix 7-8 minutes. Add Dough Enhancer and mix 2-3 more minutes for a total of 10 minutes. I have a Bosch mixer, but you can use a Kitchen-Aid OR you can do it by hand, which I did for years.
Spray bread pans with Pam, divide dough in 4 pieces, shape loaves and put in pans. Cover with wet paper towel and let rise until doubled. About 30 minutes. Place pans in COLD oven. Turn oven on to 350 degrees, and bake 35-40 minutes. Makes 4 large loaves.
You can half it if you want, but it freezes well, if it lasts that long. Homemade bread makes a house a home.
