Baked Lemon Chicken


  • 4 boneless skinless chicken breasts
  • 3 T. butter
  • 1/3 C. chicken broth
  • 4 T fresh lemon juice
  • 1 T honey
  • 2 tsp minced garlic
  • 1 tsp. Italian seasoning
  • 1 tsp. kosher salt
  • 1/4 tsp. pepper
  • Fresh Rosemary and thin lemon slices for garnish

  1. Preheat oven to 400 degrees and grease a baking sheet or large casserole dish.
  2. Melt butter in a large skillet over medium-hist heat. Add chicken and cook 2-3 minutes on each side just until browned. Transfer chicken to prepared baking sheet. Garnish with the rosemary and lemon slices. 
  3. In a small bowl, whisk together chicken broth, lemon juice, honey, garlic, Italian seasoning, and salt and pepper. 
  4. Pour sauce over chicken. Bake 20-30 minutes until chicken is cooked through. Every 5 minutes, spoon the sauce from the pan over the chicken.
