1 small Honey crisp apple-diced
1 Cup crispy dried apples
1/2 Cup candied pecans or walnuts
1/2 Cup crumbled goat cheese
Combine above ingredients, and toss with dressing right before serving.
Poppy Seed Dressing:
3/4 cup sugar
1 Tablespoon dry mustard
1/2 Teaspoon salt
1/3 cup apple cider vinegar
3 Tablespoons orange juice
1 cup canola oil
Mix well in blender, or with Burr Stick
After mixing, add 1 1/2 Tablespoons Poppy Seeds.
To candy the nuts, melt a heaping 1/4 cup of powder sugar in a pan on high heat. Once it has melted, add the nuts. Mix quickly, then dump out on a sheet of tin foil that has been sprayed with cooking spray. Once they have cooled, break, or smash them into smaller pieces.
This salad tastes so good, and the 2 different kinds of apples, and nuts give it such a great texture!
